I eat Organic Eggs practically everyday. I didn’t feel like a Frittata, sunny side up, scrambled, poached, etc. I usually associate Egg Salad with Deviled Eggs, which are awesome at Bar-Mitzvahs, Weddings, or other parties. Well, the idea became my breakfast and I didn’t have to wear a Tux! Moreover, I did not have fresh Celery or Onions–The answer: improvise!
Ingredients to serve 1 person (prep time is 20 minutes):
3 boiled Organic Eggs, Vegetarian fed, with Omegas (regular Eggs taste like Sulfur)
Reduced Calorie/Low Fat Mayo (yes, it exists)
Lawry’s Seasoning salt
Fresh, cracked Pepper
Celery Seed (I didn’t have fresh Celery)
Onion Flakes–dehydrated–I didn’t have onions to chop or carmelize
Smoked Paprika for a light garnish dusting at the end (the pretty red stuff)
Preparation begins–wait for it–wait for it– NOW!
Boil water, insert 3 eggs, create a low rolling boil for 7 minutes, flame off superheroes, and let sit for 3 minutes with the lid on, drain, and set aside.
In the meantime, don’t just stand there waiting for Publishers Clearing House to knock on your door… OMG, I WON–NOT GONNA HAPPEN, PEOPLE!
Put about 1/4 cup of Mayo in a mixing bowl
Add about 1/2 tsp. of celery seed
Add about 1 Tbspn. of onion flakes
Add a 2-3 shakes of Lawry’s Seasoning Salt (it’s STRONG stuff)
Add a 2-4 shakes of Old Bay to taste (if you have high blood pressure, there is plenty of salt in here. Please use caution–thanks, appreciate it)
Mix it all together, taste it, and adjust seasoning if you desire–more heat, etc.
Peel the eggs, discard 2 Yolks, keep all the whites (Albumen) and 1 yolk only. Put into the bowl and chop it up until it’s fine–mix it all up. Taste it again. If it’s correct, sprinkle/dust Paprika on top.
Make a sandwich, use crackers or Triscuits, use a french Baguette with roasted Garlic in it. BE CREATIVE! Don’t be boring and use white bread.
