Smoky Bacon, Tomato & Onion Frittata

Smoky Bacon, Egg & Tomato Frittata

This Smoky Bacon, Tomato and Onion Frittata is AWESOME with either Egg Whites or Whole Eggs. It is garnished with fresh Pineapple slices and julienned Basil.  If you want richness and higher cholesterol, then use butter and regular smoked Bacon. However, I am going to focus on making this delicious and moderately healthy without the tons of fat and calories. However, it will still taste fabulous!

Ingredients:

1 small onion of your choice. If you want sweet with color, use the purple onions and slice them thin because you will saute and carmelize.

Extra Virgin Olive Oil to coat the non-stick 8″ pan.

2-3 slices of Turkey Bacon; chop them before they go into the pan.

1 small, ripe tomato; chopped or diced.

3 Egg Whites–spend the few extra cents on Large, Brown Organic Eggs which are Vegetarian fed and enriched with Omega 3’s. Regular eggs tend to have a Sulfur taste. Personally, I can’t stand them.

5 drops of liquid smoke for that smoky flavor.

Julienned Basil to garnish 10 seconds before serving.

Let’s start cooking! Ok, I’m seriously hungry:

Heat Skillet, add E.V.O.O., add Onions and saute until Golden Brown for around 12-15 minutes; remove from the pan and set aside.

Add the Bacon and saute until brown, but do not overcook or burn; return the carmelized onions into the skillet; carefully stir for a minute or 2. Then, add the diced tomatoes.

Add a few drops of Liquid Smoke and some fresh, ground Black Pepper.

Add a little more E.V.O.O. to the skillet to prevent sticking.

Add the Egg Whites and spread everything around so the weight of the ingredients is evenly distributed.

When the Frittata has solidified and holding a shape, remove from the flame and place it under the Broiler to cook the top. Keep an eye on it to avoid ruining your potentially awesome Breakfast or Brunch (about 2-4 minutes).

Remove from pan and place on a plate. Garnish with the Basil. Season as desired. If the bacon has a high sodium (salt) content, then you really won’t need more salt. However, I might twist the Pepper Mill once or twice more for subtle heat… Garnish with some fresh, seasonal fruit of your choice: Berries, Grapes, Pineapple, etc.
